Boner Utility knife 150 mm from Masahiro´s MV-Pro series.
A boning knife is a type of kitchen knife with a sharp point and narrow blade. It is mainly used for removing the bones of poultry, meat and fish. Generally 12 cm to 17 cm (5 to 6 ½ in) in length, it features a very narrow blade. Boning knives are not as “thick” as some of other popular kitchen/butcher knives, to facilitate precision boning, especially in deep cuts and holes.
MV-Pro is Masahiro’s top-of-the-line series. In the production of this series, extra efforts have been made to create an even sharper edge. Although the MV-Series or MV-H series is really sharp, the MV-Pro is even sharper. According to many professional chefs who bought this knife, this is a series with perfect quality.
The knife blade from MBS-26 is treated with three stages of heating processes: Quenching, Sub-Zero Treating and Tempering. The stainless steel blade becomes incredibly hard with HRC 58 to 59. Each knife blade is sharpened to the perfect edge by craftsmen with more than 30 years’ experience and you will find an unbelievable sharp edge that is unsurpassed. The handle is made by “Black pakkawood” which is remarkably durable; it is treated with antibacterial which keeps the knife very hygienic in daily use.
